The grapes of our wines are assisted during the natural fermentation process (without the inoculation of selected yeasts) in an essential manner: human input is kept to a minimum. Our products are a straightforward expression of the territory, which means not only soil but also air, water, flowers and plants. Sometimes, it escapes us that the vine is underground, but it actually extends skywards and the leaves absorb the essence of what surrounds them. For these reasons, we do not treat our vineyards with synthetic herbicides or fungicides. Wines undergo variations in the scents and in the structure in relation to the climatic conditions. Our small artisan production prevents us from chasing after the tastes and fashions of the moment. We don’t make wine, it evolves and we watch over it.
