Even Renzo Piano has fallen in love with this location just above Acqui Terme, which marks the maturity of Fausto and Rosella Ivaldi, who, together with their daughter Gaia, a sommelier, are a couple with the restaurant business in their blood. Overall, the location looks like a relais and the guests who overnight here can make use of a sauna with wood-burning stove. You dine in the beautiful stone walled dining rooms, renovated in 2012, or in the outdoor dining area facing onto the park and equipped with a pool. If there were no people like Fausto in these very beautiful places, you would not want to go. This place truly deserves a visit, knowing that passion will also be represented by homeliness and hospitality, which is occasionally touching.



The food will be the historical one of the Salt Road. Hence, for the starters (€10) expect the anchovies of the salt road in all kinds of ways (fried they will also be an excellent main course). A must is then the creamy Russian salad, while the Fassone beef tartare here is served in very thin slices. You will be moved by grandma’s omelette with fondue paired with red tuna belly on borlotti beans. On to the first course (€8) dishes: in the area of Acqui what elsewhere is known as agnolotti here will be borage stuffed ravioli, but also trofie with pesto of Pra’, there will also be agnolotti del plin and gnocchetti with Castelmagno. On to the main course (€14), don’t miss the stewed cod and the baked kid, but also the guinea fowl with potatoes; of other visits the salted roast beef on mixed wild leaf salad, the grilled fillet. The selection of cheeses is always accompanied by the mostarda (spicy fruit chutney). Watch out for the seasons: mushrooms and chestnuts, and even the truffle reign supreme here. The desserts (€6) are both good: nougat semifreddo on chocolate fondue and apple millefeuille with pistachio ice cream. Excellent wine list, partly because when Fausto was in his legendary restaurant of Abasse he had a regular client like Giacomo Bologna, who used to order him: “Give quality!” A lovely place where we will return soon.
