Montebore, a typical cheese from Val Borbera, comes from raw cow's milk (70%) and sheep's milk (30%). Rediscovered by Roberto Grattone and his partner Agata Marchesotti, who gave it a new life preventing it from being forgotten. In the Vallenostra Cooperative Dairy, the sheep and brown cows are nutured on the mountain pastures, and their milk once worked becomes Montebore, from a creamy paste, sweet when fresh and more intense and spicy once it has aged for up to 6 months. It takes on a cylindrical shape characteristic to that of a “bridal cake” shape, obtained by overlaying three differently sized cheeses, joined after the first day of production. The initiative to adopt sheep from Montebore to guarantee a part of an exceptional and limited production is original. To taste the different seasonings of Montebore you can stay at the farm, where you can taste the dishes and traditional products prepared with certified organic ingredients (including the inimitable beans), as well as salami from Cinta Senese pigs
