At Agostino Bertelli, the long-standing butcher of Gavi, you will find a rare speciality like ‘testa in cassetta’, balanced between soft and nervy parts, with the addition of pine kernels in the mix. Do not miss the sausage and the fritì 'n ta negia (fried in rice paper), an ancient recipe of the area based on veal, sweetbread, marjoram, Grana cheese and egg yolks, all wrapped in the rice paper moistened with lukewarm milk, covered with egg white and breadcrumbs.
