The restaurant is housed in Casa della Porta, a magnificent 18th century residence, in the historic centre of Acqui Terme, just a stone's throw from the "Bollente", the well-known fountain of spa water. The Restaurant Nuovo Parisio opened on 15 November 2012, in the historic centre of Acqui Terme, to consolidate a long tradition of family cuisine. The protagonist is now Nicolò Conigliaro, the third-born of the Parisio family’s dynasty of chefs. He is a young chef from Acqui, talented, determined and eager to start his own personal journey, bringing with him the experience gained in the kitchen alongside his grandfather and uncle
