Twin brothers, Filippo and Alessandro Billi, opened this restaurant in 2018. The first gained experience with Berton and now works in the dining room, the second worked in a restaurant in Tokyo. The restaurant features an all-glass dining area that looks onto the gardens opposite the station. No parking problems here. The front counter and lounge area with armchairs and soft lighting are an invitation to sip an aperitif, before taking your seat in the convivial and beautiful spacious dining area. The menu is truly original, delicious, with a series of combinations that satisfy in full. Start with the cotechino covered with a cream of Jerusalem artichoke and wasabi. The succulent veal in tuna sauce with brown stock and capers of Pantelleria is also original. The puntarelle and anchovy salad served with whipped salt cod is delicious. The dish that makes the journey worthwhile, and which I would return for every time I pass through Tortona, remains the fried pizza served like a panzerotto with a filling of tripe in tomato sauce and parmigiana. It has an exemplary, truly exceptional fragrance. The potato dumplings (very big and soft) made with Garbagna potatoes, dressed with butter, rosemary and mussels, are good and delicate. On to the seconds, and between baked mackerel with legumes and black truffle and the chicken, with great pleasure I chose the chicken crunch, with sage, tzatziki and aromatic salad (but here I would have put savoy cabbage, according to their philosophy of delicious eating). The triple-cooked potatoes and lavender cocktail sauce were also good. The menu also included salad and prickly pear vinaigrette; the risotto with saffron and tender veal shank; the egg tagliolini, octopus, porcini and thyme, the snails in green sauce and white buckwheat polenta. Fantastic finish with the dessert trolley, with the coffee bonet (alla moka), and their ricotta cake. They will be famous.
