Molare’s agri-brewery was set up in 2010 to bring together the farming origins of beer and a territory with a strong rural vocation like that of Southern Monferrato. Molare’s farming company grows its own barley characterised by modest protein values and high starch content, on the gentle hills of the Pobiano Valley (Ovada area).
It is a member of C.O.B.I. (Barley and Beer Production Consortium) of Ancona, which has a micro-malting company that produces approximately 12,000 tons of malt a year. Our barley is sown, grown, harvested and delivered to C.O.B.I. where it is cleaned, calibrated and malted.
The malting process occurs by hydrolysis and subsequent oxygenation. After drying, it is roasted at controlled temperatures specific to each kind of malt.
At this point, the malt is delivered to Molare’s where after being blended in various types and ground it is poured into the cooking vat.
After final boiling and the addition of hops, the must is pumped into the dedicated fermenters at a controlled temperature for the related low fermentation processes and lagering. We produce low fermentation, non-pasteurised (raw) and naturally re-fermented beers.
The agriturismo-brewery is open from April to October inclusive.
