In Alexandria you must go to the Fermata. It has always been called this by the enfant prodigy Riccardo Aiachini, even when it was situated in town. Today however,  it is in an exciting location in Spinetta Marengo, in one of the beautiful manor farms which as by tradition has a church, the noble rooms and those of servitude inside. Today this reality has come back to life in the name of elegance: the two dining rooms, luminous, where the tone of white giving even more the atmosphere of celebration,being more than an events room in a very suggestive setting.
The cuisine of Richard can be summed up  as a recipe book based on strict territorial observance touched by many original creative flashes and the  fruit of his ongoing research. Tiziana, the lifelong companion of Richard, runs the dining area and offers an excellent wine list of great satisfaction accompanying a menu that does not neglect seafood selections. But to begin with, if this is your first visit, do not give up the chance to try the tempting stuffed Castellazzo onion cooked with salt. Other starters (€ 18): salmon marinated in salt from Trapani, the pureed beans with mussels tomato confit and ricotta mousse, the legendary tripe salad cooked in white wine, and sublime veal with tuna sauce or raw Fassone meat. Among the first course (€ 18), our favorite dish remains the lasagna with finely chopped Fassone meat sauce, crisp, fresh, satisfying. You won’t want to miss the traditional  Alexandrian agnolotti which are like eating candies. On another visit we remind you to try the lattughini stuffed with meat and marjoram  in broth and the Tajarin with truffles.  Among the second courses (€ 23) don’t miss the lamb fillet with potatoe purée and vegetables,  but also the pigeon or deboned quail stuffed with pumpkin purée  and black truffles.  A really tasty stir-fried squid to add to the choices . Regarding desserts, the offer of cheeses, but also the legendary stuffed peach with chocolate and amaretto, the soft chocolate cake  with raspberry sorbet. In short, a menu just the we like: not an immense number of dishes but you can remain assured, all to be tried.
